Happy Diwali!!!! To celebrate Diwali I made some halwas. This is sooji ka halwa, or as we would say in Gujarati, sheero. It's very simple to make and is a traditional religious holiday sweet. The recipe is a little improvisational. That's usually how I make Indian food, but I'll try my best to explain it. You need sooji, or coarse cream of wheat, ghee (clarified butter), peeled almond slivers, water (or milk), sugar, and saffron. First, you toast the sooji and almonds until they turn golden brown. Add some ghee and fry the sooji a little more. As with more Indian sweets, the more ghee you add, the better it will be. Then add water (or milk), saffron, and sugar and stir. Keep stirring until the water is absorbed. Serve hot. It actually turned out pretty well. I was surprised at myself. There are many variations. Raisins are a common addition. As are other dried fruits or nuts. The other halwa I made was besan, or gram flour, ka halwa. It was not good. I did not fry the flour...
